Crumbl Classic Peanut Butter Cookies

You'll love all the peanut butter flavor in these soft and chewy Crumbl Classic Peanut Butter Cookies! There's no chilling required for this easy Crumbl copycat recipe. Plus, use your favorite peanut butter--smooth, chunky, or (my fav) extra chunky.

Ingredients
  

  • 8 tablespoons unsalted butter room temp, 4 ounces
  • ½ cup packed light brown sugar 3.5 ounces
  • cup granulated sugar 2.5 ounces
  • ½ cup peanut butter 4.5 ounces (I go for extra chunky!)
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature
  • 1 ¼ cup flour 6.25 ounces
  • ½ teaspoon baking soda
  • teaspoon salt

Instructions
 

  • Preheat oven to 350°F and line two baking sheets with parchment paper.
  • In a large bowl, use a hand mixer with beaters to cream together softened butter and the sugars. Beat until totally combined and smooth, about 2-3 minutes.
  • Add peanut butter and vanilla extract and beat until combined. Add egg and beat until just combined.
  • Sprinkle the flour, baking soda, and salt over the mixture and use a spatula to fold everything together until combined and no streaks of flour remain. The dough will be soft and a bit sticky.
  • Use a 1/3 cup scoop or measuring cup to scoop/measure about 7 cookies. Since the dough is sticky, I do recommend using a cookie scoop if you have one! Place on cookie sheets 3" apart.
    Use a fork to gently press down the dough in one direction and then the other for a cross-hatch design.
  • Bake cookies one sheet at a time until the cookies are lightly crackled on top and the edges are turning golden, about 14-16 minutes. Don't overbake.
  • Cookies will be puffy and then flatten as they cool. Cool on the cookie sheets for about 10 minutes and then transfer to a cooling rack to cool completely.

Notes

Storing the cookies: Keep the cookies at room temperature in an air-tight container for up to 3 days. 
Freezing the cookies: To store the cookies longer, pop them in the freezer (use a freezer safe container or zip-top bag) and keep for 1-2 months.
